This week, "Bringing It Home" TV show host Laura McIntosh tells us how to make Peach Crisp:


Peach Mixture
4 Lbs Peaches, ripe but firm
2/3 Cup Sugar
2 tsp Pure Vanilla Extract
1 tsp Cinnamon
3 tbs Cornstarch
1 tsp Fresh Lemon Juice

Crisp Topping
¾ Cup Flour
¾ Cup Brown Sugar
1 tsp Cinnamon
½ tsp Salt
6 tbs Unsalted butter, cold, cut into small cubes
¾ Cup Old Fashioned Rolled Oats

Cooking Instructions

Preheat oven to 350?F.

Cut peaches into ½” wedges with a small paring knife. Using knife, peel away skin from wedges. Place peeled Peaches, Sugar, Vanilla, Cornstarch, and Lemon juice in large saucepan and bring to a boil. Immediately remove from heat and place in 11 x 7 baking dish. Set aside. In a food processor, add Flour, Brown Sugar, Cinnamon, and Salt in bowl of a food processor. Pulse to combine. Add cubed Butter and pulse until Butter is incorporated and topping begins to look like wet sand. Add Oats and process just to mix. You do not want to break up the Oats. Remove blade from processor and sprinkle crisp topping over prepared Peaches. Bake for 20-25 minutes or until the fruit is bubbling and topping is golden brown.

Serve warm with Vanilla Ice Cream
